Cheesy Potato Ham Chowder

Ingredients:

  1. Garnishes:
  2. 2-3/4 cups water
  3. 1 medium carrot, grated
  4. 1 rib celery, chopped
  5. 1 medium onion, peeled and chopped
  6. 1 pkg. (4.5 oz.) Betty Crocker Julienne Potatoes mix
  7. 3 cups milk
  8. 3/4 cup cubed ham
  9. 1 tablespoon lemon juice OR white wine
  10. shredded cheddar cheese
  11. parsley
  12. cilantro
Directions:

In a large saucepan combine water, carrot, celery, onion and dry potatoes from mix. Bring to boiling; reduce heat, cover and simmer 20 minutes.

Stir in milk and packet of sauce mix. Stir well and return to boil. Boil gently for 2 minutes. Stir in ham and lemon juice; heat through.

If desired, garnish with shredded cheddar cheese, snipped parsley or cilantro.
