Omelet in a Mug

Yield:

Ingredients:

  1. 2 eggs, beaten
  2. 2-3 tablespoons shredded cheddar cheese
  3. 2 tablespoons diced fully cooked ham
  4. 1 tablespoon diced green pepper
  5. salt to taste
  6. pepper to taste
Directions:

In a microwave-safe mug coated with nonstick cooking spray, combine all ingredients.

Microwave, uncovered, on high for 1 minute; stir.

Cook 30 seconds more or until eggs are completely set.

Place a paper towel or small paper plate over mug to prevent splatters in the microwave.
