Black Eyed Pea and Smoked Sausage Stew

Ingredients:

  1. 1 package (16 ounce) smoked sausage links, halved lengthwise and cut into 1/2- inch slices
  2. 1 small onion, chopped
  3. 2 cans (15 ounces each) black eyed peas, rinsed and drained
  4. 1 can (14 1/2 ounce) diced tomatoes, drained
  5. 1 can (8 ounce) tomato sauce
  6. 1 cup beef broth
  7. 2 cloves garlic, minced
  8. 1/4 teaspoon cajun seasoning
  9. 1/4 teaspoon black pepper
  10. 1/8 teaspoon salt
  11. 1/8 teaspoon cayenne pepper
  12. 1/8 teaspoon hot pepper sauce
  13. 1 1/2 cups frozen corn, thawed
  14. 1 Tablespoon olive oil
Directions:

In a large skillet, cook sausage and onion over medium heat until meat is lightly browned. Add garlic and stir for one minute; drain excess grease.

Stir in the black eyed peas, tomatoes, tomato sauce, broth, cajun seasoning, black pepper, cayenne pepper, salt and hot pepper sauce. Cook and stir for 8 minutes until hot.

Stir in the corn; cook 5 minutes longer or until heated through.

Serve with cornbread.
