Savory Sausage and Peppers over Rice

Ingredients:

  1. 1/2 pound fully cooked kielbasa or Polish sausage, cut into 1/2- inch slices
  2. 1 Tablespoon olive oil
  3. 1 medium sweet red pepper, cut into 1- inch chunks
  4. 1 medium sweet yellow pepper, cut into 1- inch chunks
  5. 1 medium green pepper, cut into 1- inch chunks
  6. 1 medium onion, cut into small wedges
  7. 1 cup water
  8. 1 package (1.2 ounce) herb and garlic soup mix
  9. 1/8 teaspoon hot pepper sauce
  10. 1 cup rice, prepared as directed on package
Directions:

In a large skillet, brown sausage in oil over medium-high heat. Remove with a slotted spoon and keep warm.

In the drippings, saute peppers and onion until crisp-tender.

In a bowl, combine the water and contents of one soup mix envelope (save the second envelope for another use).

Add soup mixture, hot pepper sauce, and sausage to the vegetables. Reduce heat; cover and simmer for 5 minutes or until thickened.

Prepare rice according to package directions.

Serve sausage and peppers over hot rice.
