Speedy Beef Hash

Ingredients:

  1. 1 lb. ground beef
  2. 1 medium onion, chopped
  3. 3 cups frozen O'Brien hash brown potatoes, thawed
  4. 1/2 teaspoon salt
  5. 1/4 teaspoon pepper
  6. 1 cup salsa
  7. 1/2 cup shredded Colby-Monterey Jack cheese
  8. sliced green onions, optional
  9. ripe olives, optional
Directions:

In a skillet, cook beef and onion over medium heat until the meat is no longer pink; drain.

Stir in the potatoes, salt and pepper. Cook ant stir over medium-high heat for 7-9 minutes or until potatoes are lightly browned. Stir in salsa. Sprinkle with cheese; cook until melted. Sprinkle with onions and olives if desired.
