Chewy Peanut-Oat Cookies

Ingredients:

  1. 1/2 cup butter or margarine, softened
  2. 2/3 cup packed brown sugar
  3. 1 egg, beaten
  4. 1/2 cup chunky peanut butter
  5. 1 1/2 teaspoon vanilla
  6. 1/2 cup all-purpose flour
  7. 1/2 cup whole-wheat pastry flour
  8. 1/2 teaspoon baking soda
  9. 1/2 teaspoon salt
  10. 1 cup rolled oats
  11. 1/2 cup chopped peanuts
Directions:

Cream together butter and sugar. Add egg; beat well. Stir in peanut butter and vanilla; beat smooth.

Combine flours, soda and salt; stir until well mixed. Stir flour mixture into butter-sugar mixture. Add oats and peanuts. Drop by teaspoon onto greased cookie sheets. Flatten slightly with fork. Bake in 350 F. for 12 to 14 minutes.
