Soy and Berry Pancakes

Yield:
4 to 5 servings

Be versatile - use blueberries, strawberries or raspberries. Even try bananas.

Ingredients:

  1. 2 eggs
  2. 1 cup soymilk (vanilla or plain)
  3. 3-4 tablespoons cultured Soy (vanilla or plain) (optional)
  4. 1 cup flour
  5. 2 tablespoons cornstarch
  6. 1 tablespoon baking powder
  7. 1/4 teaspoon baking soda
  8. 2 tablespoons honey
  9. 2 tablespoons oil
  10. 3/4 cup blueberries
Directions:

Beat the eggs and soymilk in a mixing bowl. Add flour, cornstarch, baking powder, baking soda, honey and cultured soy. Beat well.

Then stir in the blueberries and the oil. Cook on a hot griddle.

You can substitute blueberries for any other fruit you like (bananas, strawberries, raspberries, etc.).
