Strawberry-Banana Gelatin Salad

12-15 servings

Ingredients:

  1. 1 pkg. (6 oz.) strawberry gelatin
  2. 1 cup boiling water
  3. 2 pkgs. (10 oz. each) frozen sweetened sliced strawberries, partially thawed
  4. 1 can (20 oz.) crushed pineapple, undrained
  5. 1 cup mashed firm bananas (about 3 medium)
  6. 1/2-3/4 cup chopped walnuts
  7. 2 cups (16 oz.) sour cream
  8. 2 teaspoons sugar
  9. 1/2 teaspoon vanilla extract
Directions:

In a bowl, dissolve gelatin in water. Stir in strawberries, pineapple, bananas and nuts. Pour half of the mixture into a 13x9x2 in. dish. Refrigerate for 1 hour or until set.

Set the remaining gelatin mixture aside.

Combine the sour cream, sugar and vanilla; mix well. Spread over the chilled gelatin. Spoon remaining gelatin mixture over top. Chill overnight.
