Spicy Black Bean Dip with Tortilla Chips

Yield:
5 cups

Ingredients:

  1. 1 large sweet onion, diced
  2. 3 cloves garlic, minced
  3. 1 tablespoon olive oil
  4. 2 cubes vegetable bouillon
  5. 1/2 cup boiling water
  6. 3 cans (15 oz.) black beans, drained and mashed
  7. 2 Jalapeno peppers, seeded and minced
  8. 1 tablespoon chili powder
  9. 1/2 teaspoon ground cumin
  10. 1/2 teaspoon pepper
  11. Tortilla chips
Directions:

Cook onion and garlic in hot oil in a skillet over medium high heat, stirring often (about 20 minutes.) Combine bouillon cubes and 1/2 cup boiling water. Stir until cubes have dissolved. Add bouillon, beans, peppers, chili powder, cumin and pepper to onion mixture; cook over medium high heat, stirring often (about 10 minutes.) Serve with Tortilla Chips
