Creamed Turkey Over Rice

Ingredients:

  1. 1 medium onion, chopped
  2. 1/2 cup chopped celery
  3. 1/4 cup butter or margarine
  4. 1/4 cup all-purpose flour
  5. 1 1/2 cups chicken broth
  6. 2 cups cubed cooked turkey
  7. 1 cup milk
  8. 1/2 cup cubed Swiss cheese
  9. 1 tablespoon diced pimientos
  10. 1/2 teaspoon salt
  11. 1/4 teaspoon pepper
  12. 1/4 teaspoon ground nutmeg
  13. hot long grain and wild rice
Directions:

In a skillet, saute onion and celery in butter until tender. Stir in flour until blended. Gradually stir in broth. Bring to a boil; boil and stir for 2 min. Reduce heat; stir in turkey, milk, cheese, pimientos, salt, pepper and nutmeg. Cook until cheese is melted and mixture is heated through. Serve over rice.
