Curried Chicken Peanut Salad

Ingredients:

  1. 2 cups chopped cooked chicken
  2. 1 cup fresh pineapple chunks or 1 can (8 ounce) pineapple tidbits, drained
  3. 1 cup chopped peanuts
  4. 2 stalks celery, chopped
  5. 1/2 cup sour cream
  6. 1/2 cup mayonnaise
  7. 2 tablespoons peanut butter
  8. 1/2 teaspoon curry powder
  9. 1/4 teaspoon salt
  10. Lettuce leaves
Directions:

Stir together chicken, pineapple, peanuts and celery.

Combine sour cream, mayonnaise, peanut butter, curry powder and salt; stir into chicken mixture until evenly moistened. Cover and chill before serving.

To serve, spoon salad onto lettuce lined plates.
