White Beans, Tuna and Red Onions

Yield:
Makes 2-4 servings

A Tuscan dish with endless possibilities!

Ingredients:

  1. 2 cups white beans (cannellini), cooked or canned, drained
  2. 1 can (6 oz.) tuna (preferably packed in oil), drained and flaked
  3. 1/2 medium red onion, thinly sliced
  4. Olive oil, to taste
  5. Freshly ground black pepper, to taste
Directions:

Place the white beans in a large bowl. Top with the tuna, then the onions. Drizzle with oil and sprinkle with pepper to taste.


Note: This Tuscan dish exists in many variations. If desired, add a drizzle of red wine vinegar or lemon juice, substitute scallions for the red onion or garnish with parsley or basil.
