Chopped Green Salad with Tuna and Garlic

Yield:
Makes 4 servings

Ingredients:

  1. 6 tablespoons extra-virgin olive oil
  2. 1 clove garlic, finely minced
  3. 1/4 cup red wine vinegar
  4. 1/2 head escarole, very thinly sliced
  5. 1/2 head romaine lettuce, very thinly sliced
  6. 2 cans (6-oz.) tuna (preferably packed in oil), drained
  7. salt to taste
  8. freshly ground black pepper to taste
Directions:

In a large bowl, whisk together the oil, garlic and vinegar. Add the escarole, romaine, tuna and salt and pepper to taste and toss well. Serve immediately.
