Mediterranean Kabobs

Ingredients:

  1. 1 lb. boneless pork loin
  2. 1 jar (6 oz.) marinated artichoke hearts
  3. 1 sweet red bell pepper, cut into squares
  4. 1 teaspoon hot pepper sauce
  5. 1 teaspoon oregano
  6. 2 tablespoons Lime juice
  7. 2 teaspoons ground black pepper
Directions:

Cut pork loin into 1-inch cubes and place in a self-sealing bag. Drain artichoke hearts, reserving marinade; set artichoke and pepper squares aside. Add reserved marinade with remaining ingredients to bag; mix well and seal. Let stand for 30 minutes. Alternate pork, artichoke hearts and peppers onto skewers. Grill 15 minutes, just until done and nicely browned.
