Black Bean and Hominy Salsa

Ingredients:

  1. 2 cups black beans, cooked, rinsed and drained
  2. 1 can (15 oz.) golden hominy, rinsed and drained
  3. 1 avocado, diced
  4. 1 cup yellow bell pepper, diced
  5. 1/2 cup red onion, chopped
  6. 1/4 cup fresh cilantro, chopped
  7. 1 1/2 tablespoons jalapeno, minced and seeded
  8. 1/2 cup salsa, prepared (refrigerated-style)
  9. salt and pepper to taste
Directions:

In a large bowl, combine black beans, golden hominy, avocado, yellow bell pepper, red onion, fresh cilantro and jalapeno. Add salsa; gently toss. Taste and add salt and pepper as needed.
