Ravishing Refried Beans

Ingredients:

  1. 2-3 cloves garlic, minced
  2. 2 teaspoons canola oil or vegetable oil
  3. 1-1/2 cups black beans, cooked (including 1/2 cup of cooking liquid or bean juice)
  4. 1/2 cup water
  5. salt and pepper to taste
  6. 2-3 tablespoons chopped cilantro
  7. Sour cream
Directions:

In a deep medium skillet on medium heat, cook garlic in canola oil or vegetable oil about 1 minute. Add cooked black beans; mash with potato masher to a course puree. Stir in enough water to make a creamy consistency. Add salt and pepper to taste. Sprinkle with fresh cilantro.
