Fast Bean Soup

A mouth-watering meal in a bowl

Ingredients:

  1. 1 tablespoon vegetable or canola oil
  2. 1 large onion, chopped
  3. 3 cloves garlic, minced
  4. 1 1/2 teaspoons dried thyme
  5. 3 cans (15-oz.) black beans
  6. 1 can (28-oz.) tomatoes, diced with juice
  7. 1 can (14 1/2-oz.) sodium-reduced chicken broth
  8. 1 1/2 teaspoons ground cumin
  9. Salt and Pepper for taste
  10. Topping: Sour Cream
Directions:

Heat vegetable or canola oil in pot on medium-high heat. Add onion, garlic and dried thyme; cook 3-4 minutes. Add beans, tomatos, chicken broth and ground cumin. Boil on high heat; reduce to low and simmer 12-15 minutes. Puree in 3 batches in food processor fitted with metal blades. If mixture is too thick, thin with chicken broth. Taste and add salt and pepper if needed. Ladle into 6 bowls and top with dollop of sour cream. Pass the hot sauce.
