Sausage Potatoes Au Gratin

Ingredients:

  1. 1 lb. cooked smoked sausage, halved lengthwise and sliced
  2. 1 medium onion, chopped
  3. 1 tablespoon vegetable oil
  4. 4 medium carrots, julienned
  5. 1 pkg. au gratin potatoes
  6. 2 - 2/3 cups water
  7. 1/4 teaspoon pepper
  8. 1 pkg. (10 oz.) frozen broccoli cuts, thawed and drained
  9. 4 oz. shredded cheddar cheese
Directions:

In large saucepan, cook sausage and onion in oil until lightly browned. Stir in carrots, potatoes and sauce mix, water and pepper. Bring to a boil. Reduce heat; cover and simmer for 10 - 20 minutes or until vegetables are tender. Stir in broccoli; cover and cook 5 minutes longer or until heated through. Sprinkle with cheese, cover and let stand until cheese has melted.
