Beef and Green Chile Crockpot Stew

Yield:
Makes about 4 servings

Ingredients:

  1. 3/4 pound lean beef stew meat, cut into 3/4- inch cubes
  2. 1 large onion, chopped
  3. 2 cloves garlic, minced
  4. 1 can (14 1/2 ounce) diced tomatoes, undrained
  5. 2 cans (4 ounce each) diced green chiles
  6. 1 can (18.5 ounce) whole kernel corn, undrained
  7. 1 1/2 teaspoons dried oregano leaves, crushed
  8. 1 teaspoon ground cumin
  9. 1/2 teaspoon salt
  10. 1/4 teaspoon red pepper (cayenne)
  11. 2 Tablespoons yellow cornmeal
Directions:

Combine all ingredients EXCEPT cornmeal in a 3 1/2- quart slow cooker, mixing well.

Cover and cook on LOW for 7 to 8 hours or until meat is tender.

Turn control to HIGH. Stir in cornmeal. Cover and cook for 20 to 25 minutes.
