Pumpkin Date Cookies

A delicious lunch box treat or after school snack!

Ingredients:

  1. 1 1/2 cups whole wheat flour
  2. 2 teaspoons baking powder
  3. 1/2 teaspoon baking soda
  4. 1/2 teaspoon salt
  5. 1 teaspoon cinnamon
  6. 1/2 teaspoon nutmeg
  7. 1/8 teaspoon ground cloves
  8. 2/3 cup butter or margarine, softened
  9. 1/2 cup granulated sugar
  10. 1/2 cup brown sugar
  11. 2 eggs
  12. 1 1/4 cups (15 ounce can) solid pack pumpkin or cooked pumpkin
  13. 1 teaspoon vanilla extract
  14. 1 cup chopped dates
  15. 1 cup rolled oats
  16. 1/2 cup chopped nuts
Directions:

Preheat oven to 375 degrees F

In mixing bowl, stir together flour, baking powder, soda, salt, cinnamon, nutmeg, and cloves until well blended. Set aside.

Cream butter and sugars in large mixing bowl. Add eggs; beat well. Stir in pumpkin and vanilla. Blend in flour mixture; stir thoroughly. Add dates, oats and nuts; mix well.

Drop by teaspoonfuls onto parchment paper lined baking sheet.

Bake for 12 minutes. Remove to rack to cool.
