Pumpkin Souffle

Welcome the chilly fall season with this elegant souffle

Ingredients:

  1. 1 cup canned solid pack pumpkin or cooked fresh pumpkin
  2. 1/2 teaspoon ground nutmeg
  3. 1/2 teaspoon grated lemon zest
  4. 1/2 cup firmly packed brown sugar
  5. 3 egg whites
  6. 1/8 teaspoon salt
Directions:

Preheat oven to 350 degrees F

Combine pumpkin with nutmeg, lemon zest and brown sugar; mix well.

Beat egg whites until stiff. Add salt; fold into pumpkin mixture.

Fill greased 1-quart baking dish or individual molds two-thirds full; set in pan of hot water.

Bake about 40 minutes for large mold, 25 to 30 minutes for individual molds.
