Curried Walnut Dip

Ingredients:

  1. 1 cup lowfat cottage cheese
  2. 2 tablespoons orange marmalade
  3. 1 green onion, cut into 1-inch pieces
  4. 3/4 teaspoon curry powder
  5. 1/2 teaspoon salt
  6. 1/4 teaspoon liquid red pepper
  7. 1/2 cup toasted walnuts
  8. 1/2 cup nonfat sour cream
  9. assorted vegetable pieces and breadsticks for dipping
Directions:

Puree cottage cheese, marmalade, onion, curry powder, salt and liquid red pepper in blender; add walnuts and whirl to finely chop. Add sour cream; whirl to blend. Scrape into serving bowl. Chill several hours for flavors to mellow. Serve with cut up vegetables and breadsticks.
