Orange Raisin Whole Wheat Cake

Yield:
Makes 9 servings

Ingredients:

  1. 1 1/4 cups Pillsbury's Best All-Purpose Flour
  2. 1 cup Pillsbury's Best Whole Wheat Flour
  3. 1 cup brown sugar
  4. 1 teaspoon baking soda
  5. 1/2 teaspoon salt
  6. 1 cup orange juice
  7. 1/2 cup oil
  8. 1 teaspoon grated orange rind
  9. 1 egg
  10. 1/2 cup raisins
  11. HONEY-NUT TOPPING
  12. 1 tablespoon cornstarch
  13. 1/2 cup chopped walnuts
  14. 1/2 cup water
  15. 1/2 cup honey
  16. 1/2 cup butter
Directions:

Heat oven to 350 F. Grease and flour 8- or 9-inch square pan.

Combine all ingredients except raisins; beat 2 minutes at medium speed. Stir in raisins. Pour into prepared pan.

Bake at 350 F. for 40 - 50 minutes or until toothpick inserted in center comes out clean. Serve with Honey-Nut topping if desired.

To prepare topping:
In small saucepan, combine cornstarch and honey; add remaining ingredients. Cook over medium heat, stirring constantly, until mixture starts to boil. Continue cooking and stirring about 1 minute or until slightly thickened. Serve warm. Makes 1-3/4 cups.
