Festive Cranberry Orange Carrot Cake

Ingredients:

  1. Cake
  2. 1 box (1 lb 2-1/4 oz) moist spice cake mix
  3. 1 cup water
  4. 1/3 cup applesauce
  5. 3/4 cup Second Nature Eggs
  6. 2 cups grated carrots
  7. 1/2 cup dried cranberries or golden raisins
  8. 2 teaspoons grated orange peel
  9. Orange Cream Cheese Frosting
  10. 4 ounces Neufchatel cream cheese
  11. 2 tablespoons butter or margarine
  12. 2 cups powdered sugar
  13. 1 teaspoon grated orange peel
Directions:

Heat oven to 350 F. Coat two 8 or 9-inch round cake pans with no-stick cooking spray.

Combine cake mix, water, applesauce and Second Nature Eggs in large mixing bowl. Beat on low speed 1 minute; continue beating on medium 2 minutes. Stir in carrots, cranberries and orange peel. Pour into prepared pans.

Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Turn out onto racks and cool completely. Spread Orange Cream Cheese Frosting between layers. Spread sides and top of cake with remaining frosting.

Orange Cream Cheese Frosting: Combine cream cheese and butter or margarine; beat until smooth. Gradually beat in confectioners sugar and grated orange peel.

For easy carrot cake, simply omit cranberries and orange peel from cake and frosting recipes.
