Spiced Apple Tart

Ingredients:

  1. 4 cups Granny Smith apples, peeled and thinly sliced
  2. 2/3 cup sugar
  3. 3/4 cup apple juice or water
  4. 1/2 teaspoon ground cinnamon
  5. 2 tablespoons cornstarch
  6. 1/4 cup cold water
  7. 1 pkg. (3 oz.) lemon flavored gelatin
  8. 1 prepared graham cracker crumb crust
Directions:

Mix apples, sugar, apple juice and cinnamon in a medium saucepan. Bring to boil on medium-high heat. Cook over medium heat until apples are tender, about 5 minutes. In separate bowl, blend cornstarch and water together until smooth. Stir into apple mixture. Return to boil; boil 1 minute, stirring constantly. Remove from heat. Stir in gelatin until completely dissolved. Pour into crust. Refrigerate until firm.
