Wild Rice Soup

Ingredients:

  1. 2 tablespoons onion, chopped
  2. 3 tablespoons butter
  3. 1/4 cup flour
  4. 4 cups chicken broth
  5. 1/2 cup cooked wild rice
  6. 1 cup half and half cream
  7. 1/4 cup sherry
  8. chopped parsley
Directions:

In large saucepan, cook onion and mushrooms in butter until onion is transparent. Add flour and stir until blended. Add chicken broth and cook 8-10 minutes, stirring until smooth. Add rice, cream and sherry, heating through. Garnish with parsley and serve hot.
