Classic Rice Salad

Save three Easter eggs to prepare this rice salad

Ingredients:

  1. 3 cups cooked rice, cooled
  2. 3 hard-cooked eggs, chopped
  3. 1/2 cup reduced-calorie mayonnaise
  4. 1/2 cup finely chopped green onions
  5. 1/2 cup chopped sweet pickles
  6. 1 jar (2 oz.) pimientos, diced (1/4 cup)
  7. 1 teaspoon prepared mustard
  8. 1/4 teaspoon ground black pepper
  9. lettuce leaves (optional)
Directions:

Combine rice, eggs, mayonnaise, onions, pickles, pimientos, mustard and pepper in large bowl. Toss to thoroughly combine. Chill, serve in lettuce leaves, if desired.
