Squash Souffle

Yield:
Serves 4

Ingredients:

  1. 4 medium yellow squash, sliced
  2. 1 medium onion, chopped
  3. Salt and pepper to taste
  4. 4 saltine crackers, crushed
  5. 4 tablespoons melted butter
  6. 2 eggs, separated
  7. 1/3 cup grated cheese (cheddar or peppered cheese is good)
Directions:

Steam onion and squash together until tender. Drain excess water and mash well. Add crushed crackers, salt, pepper, butter, 2 beaten egg yokes and cheese. Blend well. Fold in 2 stiffly beaten egg whites. Pour into greased baking dish and bake at 350 degrees about 45 minutes or until set and slightly brown.
