Beef and Macaroni Chili

Yield:
5 servings (1 cup)

Serve with cheddar cheese bread and a crisp green salad!

Ingredients:

  1. 1 Tablespoon oil
  2. 3/4 pound ground beef or ground turkey
  3. 1 medium onion, chopped
  4. 1 medium green bell pepper, chopped
  5. 2 cans (14 1/2 ounce each) diced tomatoes, undrained
  6. 1 package (9 to 10 ounce) frozen corn
  7. 1/2 cup uncooked elbow macaroni
  8. 1 Tablespoon chili powder
  9. 1/4 teaspoon salt
  10. 1/4 teaspoon pepper
Directions:

Heat oil in Dutch oven or large skillet over medium-high heat.

Add ground beef (or turkey) and onion; cook 5 to 8 minutes or until meat is browned, stirring frequently. Drain; reduce heat to medium.

Stir in onion, green pepper, tomatoes, macaroni, corn, chili powder, salt and pepper; cover. Cook 15 to 20 minutes or until macaroni is tender and flavors are blended, stirring occasionally.
