Lemony Vegetable Saute

Yield:
4 to 6 servings

Ingredients:

  1. 1/2 pound broccolini, cut into flowerettes
  2. 2 Tablespoons canola oil
  3. 2 cups thinly sliced carrots
  4. 2 cups sliced fresh mushrooms
  5. 1 lemon, thinly sliced
  6. 1/4 cup butter, melted
  7. 3 Tablespoons granulated sugar
Directions:

Saute broccolini in oil until tender crisp; remove.

Stir in carrots and saute until tender crisp. Stir in mushrooms and saute lightly. Return broccolini to skillet and stir in lemon.

Combine butter and sugar; add to vegetables. Stir until vegetables are glazed and serve immediately.
