Triple Corn Fritters

Yield:
Makes 28 fritters

Ingredients:

  1. 1 1/3 cups Pillsbury's Best All-Purpose or Unbleached Flour*
  2. 1/2 cup yellow cornmeal
  3. 1 tablespoon baking powder
  4. 2 teaspoons sugar
  5. 1 teaspoon salt
  6. 2 eggs, beaten
  7. 1/3 cup milk
  8. 2 tablespoons oil
  9. 1 can (8-oz.) Green Giant Brand Golden Cream Style Corn
  10. 1 can (12-oz.) Green Giant Niblets Brand Golden Whole Kernel Corn, drained
  11. Oil for deep frying
Directions:

Lightly spoon flour into measuring cup; level off.

In medium bowl, combine flour, cornmeal, baking powder, sugar and salt.

In large bowl, combine eggs, milk, oil and cream style corn. Blend in dry ingredients, stirring just until moistened. Stir in whole kernel corn.

In deep fat fryer or heavy saucepan drop batter by tablespoonfuls and fry in 2-3 inches hot fat (365 F.) for 2-3 minutes on each side or until golden brown. Drain on paper towel. Serve warm.

*Self-rising flour is not recommended.
