Sweet Potato Fruit Salad

Yield:
Makes 8 (1/2 cup) servings

Ingredients:

  1. 2 cups cubed cooked sweet potatoes
  2. 1/4 cup chopped dates or raisins
  3. 1 banana, sliced
  4. 1 can (8 oz.) pineapple chunks, drained, reserving liquid
  5. 1/4 cup light mayonnaise or light salad dressing
  6. 2 tablespoons reduced fat peanut butter
  7. 2 tablespoons pineapple juice, reserved
  8. 1/4 teaspoon hot pepper sauce
Directions:

In large bowl, combine all salad ingredients, mix gently. In small bowl, combine all dressing ingredients, blend well. Pour over salad, mix gently.
