Albondigas Soup for Two

Yield:
Makes 3 cups or 2 servings

Ingredients:

  1. 1/2 lb. ground beef
  2. 2 tablespoons finely chopped onion
  3. 2 tablespoons finely chopped parsley
  4. 1 1/4 teaspoons chili powder
  5. 1 medium clove garlic, minced
  6. 1 tablespoon salad oil
  7. 1 can (10 1/2 ounces) Campbell's Ready to Serve Low Sodium French Onion Soup
  8. 1/2 cup chopped canned tomatos
  9. 1/2 cup sliced fresh mushrooms
  10. 1/4 cup uncooked quick-cooking rice
  11. 2 tablespoons chopped canned green chilies
Directions:

1. In medium bowl, mix well meat, onion, parsley, 1/4 teaspoon chili powder and garlic. Shape into 16 meatballs.

2. In 2-quart saucepan over medium heat, in hot oil, cook meatballs until browned on all sides. Pour off fat.

3. Add remaining ingredients. Heat to boiling; reduce heat to low. Cover; simmer 10 minutes or until rice is tender, stirring occasionally.

4. Ladle into soup bowls.
