Warm Gazpacho

Yield:
Makes 1 3/4 cups or 2 servings

Ingredients:

  1. 2 cans (6 ounces each) V-8 Low Sodium Cocktail Vegetable Juice
  2. 1 tablespoon finely chopped cucumber
  3. 1 tablespoon finely chopped green pepper
  4. 1/2 teaspoon lemon juice
Directions:

1. In 1-quart saucepan, over medium heat, combine all ingredients. Heat to boiling. Reduce heat to low. Simmer a few minutes to blend flavors, stirring occasionally. 2. To serve: Pour into mugs; serve with spoon.
