Pasta with Garlic and Herbs

Yield:
8 servings

Ingredients:

  1. 1 lb. dried pasta
  2. 2 tablespoons olive oil
  3. 1 medium onion, diced
  4. 3 cloves garlic, minced
  5. 1 cup dry vermouth
  6. salt to taste
  7. 1/4 teaspoon hot red-pepper flakes
  8. 1 teaspoon dried whole oregano
  9. 2 tablespoons chopped fresh basil (or 1 tablespoon dried basil)
  10. 1/4 cup chopped fresh parsley
  11. grated Parmesan cheese (optional)
Directions:

1. While the pasta is cooking, heat the olive oil in a skillet, add the onion, and saute until it is translucent. Then add the garlic and saute for a minute more.

2. Add the vermouth, salt to taste, the red-pepper flakes, oregano, basil, and parsley. Mix well and cook over medium-high heat for 5 minutes.

3. Pour over cooked, drained pasta, toss well, and serve with grated Parmesan cheese if desired.
