Tangy Coconut Salad Dressing for Fruit, Ham or Chicken Salad

Yield:
Makes 1 3/4 cups

Ingredients:

  1. 1/2 cup olive oil or corn oil
  2. 1/2 cup Coco Casa Cream of Coconut
  3. 1 can (6-oz.) frozen concentrated orange juice, thawed and undiluted
  4. 1/4 teaspoon curry powder
  5. 1/2 teaspoon salt
Directions:

In a bowl, combine all ingredients and beat until smooth and thick. Chill until ready to serve. Beat again and toss with salad when ready to serve.
