Sausage and Pepper Filled Deli Sandwiches

Ingredients:

  1. 1 1/2 pounds sweet Italian sausage
  2. 1 clove garlic, chopped
  3. 2 red onions, sliced thinly
  4. 2 red peppers, seeded and cut into thin strips
  5. 2 green peppers, seeded and cut into thin strips
  6. 3 tomatoes, chopped
  7. 1 teaspoon oregano
  8. Salt to taste
  9. 6 deli sandwich rolls
  10. Pepper to taste
Directions:

Slice sausages in 1/2- inch thick crosswise slices. Fry sausage in a skillet until brown and cooked; remove from skillet.

Add garlic, onions and peppers to pan drippings. Saute for 5 to 6 minutes or until vegetables are tender, but still crisp. Add tomatoes and oregano and simmer 3 to 4 minutes until tomatoes are warm. Season to taste with salt and pepper. Fill deli rolls with sausage filling. Serve at once.
