Turkey Macaroni Salad

Yield:
Makes 6 servings.

Ingredients:

  1. 2 cups (8 ounce) elbow macaroni
  2. 1 cup mayonnaise
  3. 1/4 cup light cream
  4. 1 cup sliced celery
  5. 1 Tablespoon minced scallions
  6. 1 Tablespoon minced crystallized ginger, if desired
  7. 1 teaspoon salt
  8. Dash pepper
  9. 2 cups diced cooked turkey
  10. 1 cup seedless grapes, cut in half
  11. 1/2 cup coarsely chopped walnuts
  12. Salad greens
  13. Dried cranberries
Directions:

Cook macaroni as directed on package; drain. Rinse with cold water; drain again.

Meanwhile, in large salad bowl stir together mayonnaise, cream, celery, scallions, ginger, salt and pepper.

Add macaroni, turkey, grapes and walnuts; mix lightly. Serve on individual plates over greens. Garnish with dried cranberries and additional grapes and walnuts, if desired.
